Well, I’ve been keeping up on my gardening blog quite frequently, so that is why I am SO excited to tell y’all about what came up this week in the greens! I got a huge supply of zucchini, yellow cucumber, green beans, peppers, carrots, cantaloupe, and corn! The tomatoes, watermelon, wax peppers, and jalapeños are definitely coming in, but will probably be ready to rumble next week.
Seeing these veggies cut up on my kitchen counter is such a surreal feeling. It’s amazing that my garden was absolutely nothing before I raked out some soil, planted a few tiny seeds, and tended to it every day! How can such an abundance of food grow from such small seeds?! I can totally understand how those who’ve claimed a green thumb for so many years, take such pride in their fruits and veggies!
On tonight’s plate, I enjoyed a Parmesan-crusted stir-fry of green beans, green peppers, yellow cucumber, and zucchini. Followed with boiled red potatoes and chopped carrots drizzled with Smart Balance™ butter and garlic salt. Yum! 
I found an awesome recipe that is perfect for all the different veggies that are popping up in my garden! It’s a Fingerling Potato Salad with Honey-Thyme Vinaigrette from Midwest Living…and it looks GOOD!
Next week, when the rest of my crops are in, I’ll check back and let you know which recipe I decide to go with.
For now, I have some potatoes, squash, and zucchini freezing and some peppers, cucumbers, and carrots sitting in a nice porcelain bowl on my kitchen counter, also serving as a nice counter top piece.
